my theory is that it's because animals represent pure innocence to us. When a human dies in a movie, they usually know what's going on, and can communicate what they feel, and somewhere in the back of your mind you know that person isn't perfect. Animals on the other hand, they have an inability to communicate their thoughts, and any pain they caused, they only caused out of necessity, and not cruelty. Our inability to tell exactly how that animal feels makes it worse.
